Fresh Strawberry Sauce
2 cups sugar (I used less because we're cutting back on sugar)
1 large lemon, zested and juiced
3 cups strawberries, washed, hulled, & sliced
Combine the sugar, zest, and juice in a small saucepan and cook over low heat for about 10 minutes, stirring occasionally (until the sugar is dissolved). Add the berries and continue to cook for about 20 minutes more or until the strawberries release some juice and the mixture simmers. It will thicken or "gel" slightly - depending on the amount of sugar you use, for example.
Cool the sauce a bit and then pour into jars. Keep refrigerated or freeze for longer storage.
I'm thinking of trying this recipe using other berries - perhaps raspberries, blueberries, or blackberries. if you try this recipe or other variations, I'd love to hear about your experience!
