|Fresh New Jersey Scallops|
This week's entree is super simple - with just 5 ingredients and a short cooking time, as well. It has a bit of a spicy kick, but you could make a mild version if you prefer.
2 cups tomatilla salsa (or whatever style you prefer)
1 1/2 cups sour cream
24 ounces fresh NJ scallops
1 lime, cut in wedges
Heat the salsa until warmed through. Remove from the heat and stir in the sour cream; mix well and set aside. Then saute the scallops in a little butter until tender and add the sauce to the seafood; simmer for about 30 seconds on low heat. Serve with a lime wedge garnish.
I think I would add a shower of chopped cilantro and serve this with "Jersey Fresh" corn on the cob and sliced tomatoes or cucumber & onion salad.
