Seashore - style Deviled Eggs
Slow Cooker Barbecue Ribs
"Jersey Fresh" Corn on the Cob and Sliced Tomatoes
Traditional summer foods, right? Here's how I make them "easy." First, purchase seasonal fruits and vegetables from your local farmer or Farmer's Market and use them up quickly (corn, tomatoes, watermelon).
Early in the day, or a day ahead, cook (steam) the eggs using this interesting method. To make them Seashore-Style Deviled Eggs, mash the yolks with mayonnaise and season to taste with Old Bay and a dash of hot sauce and fill the cooked egg white halves with the mixture. Chill. Before serving, garnish the stuffed eggs with small chunks of cooked shrimp. Lumps of crab would work well, also.
For the Barbecued Ribs, I followed a recipe using a slow cooker. Brown the ribs in the oven early in the day while you make the barbecue sauce (or use a favorite bottled variety). Cut the ribs into serving portions. Put some of the sauce in the slow cooker, add some ribs and cover them with some sauce, then repeat until all of the ribs and sauce are used. Cover the slow cooker, set the temperature to low, and go enjoy the day.
When you return, slice the "Jersey Fresh" Tomatoes and drizzle with olive oil and fresh herbs, if you like, and sprinkle with sea salt. Husk the "Jersey Fresh" Corn and microwave the ears for about 10 minutes and serve with salt, pepper, and melted butter or use Old Bay on the corn for spicy, seashore flavor.
