Salsa is a wonderful recipe to have in your repertoire - it is so versatile and may be made with whatever ingredients are available in your local Farmer's Market. So, be creative and adapt this recipe to your taste and to what's in season.
Salsa is also adaptable regarding its uses. Here at the Scarborough Inn, for Breakfast, it can accompany an omelet or egg bake - adding bright, fresh flavor to a traditional morning offering. During Afternoon Refreshments, it is delightful with crispy chips or with a mild cheese. At your home, try it with meats or fish hot off the grill.
In all its' incarnations, you'll find that "Jersey Fresh" Salsa is delicious!
"Jersey Fresh" Salsa Recipe
2 ears Jersey corn
2 Jersey tomatoes--diced
1/2 red onion--diced
1 Jersey green pepper--diced
2 cloves garlic--minced
Juice of 1 Lime
1 tablespoon olive oil
Few drops of hot sauce (Optional)
Kosher salt and fresh ground pepper
Bring a large pot of water to a boil, and cook corn until tender, 7- 10 minutes*. Cool corn under cold water until you can handle it and cut kernels from the cob. Mix the corn in a glass bowl with the remaining ingredients and season to taste with salt and pepper. Cover the bowl and refrigerate.

* INNsider Tip - I prefer to microwave the corn (it's quick & there's less cleanup) and I would also keep it al dente because I favor a little crunch.
